Somerset Levels lamb, gently spiced with coriander, cumin, fennel seeds and chilies. A raisin and cranberry cous cous, chickpeas, red pepper and a dollop of yogurt.

Crispy pork belly and a roulade of picked ham hock, tarragon and whole grain mustard. A Serrano ham crisp, baby turnips, poached eggs and chips complete the dish.

Somerset pork slowly cooked with peppers, red onions and olives, served with basil oil courgettes and potatoes

Barbary duck breast grilled crispy. Celeriac rösti, garlic and cream Savoy cabbage and a rhubarb compote complete this tasty dish
